As soon as it goes below 60 I seem to want a warm beverage. Are you like that too?
There's just something about cozying up to a mug of something hot, warming both your hands, your throat, and your insides.
It's like a warm hug I guess? I don't know, but it's so comforting.
I used to think coffee or tea were the only options, but one thing I've learned is that there are a TON of fun things to drink. Even now, when I'm not on the AIP diet and can drink coffee I choose to drink some of the new things I've learned about instead.
After all, life's too short to get stuck just drinking coffee! How boring!

Why a Beetroot Latte?
So you may be wondering why you'd drink beets, but they're actually quite delicious inside of this beverage.
This is a coffee-free drink, so when you don't have the bitterness of coffee, you need something to offset the sweet. Beets do this surprisingly well with their earthiness.
It's not that they taste like coffee, but they bring a yummy undertone to the drink to give it a nice rounded flavor other than drinking warm milk.
Plus, beets are great for our livers – helping them to empty out toxins and support them to work well. Who couldn't use a little gentle detox?
How do you make them?
I've seen beetroot lattes done in several ways, some people use an actual beetroot, cook it, and then blend it into the milk and other ingredients, and some, like this one below, use beetroot powder.
Neither is wrong, and they'll produce various amounts of intensity (of both flavor and color) but I do find the beetroot powder method to be a lot easier and quicker, so that's my method of choice.
As a result, it's a “mix the ingredients together in a saucepan and heat” kind of recipe. MY kind of recipe, lol!
What are the ingredients?

There's a simple list of ingredients for this:
• Beetroot Powder – You may be able to find this at a local health-minded grocery store like a Whole Foods, Natural Grocers, or Sprouts, or you can purchase it on Amazon.
• Cinnamon – just normal dried ground cinnamon!
• Maple Syrup – or whatever sweetener you'd like.
