Pineapple Salsa

Super quick and easy to make, this tasty pineapple salsa is a perfect condiment for chicken, steak, fish, pork, and side dishes like sweet potato. It's Paleo, Whole30, and AIP friendly as well!

Quick condiment for major flavor

You ever make a dinner like chicken, diced roasted sweet potatoes, and roasted broccoli and just are underwhelmed with your meal?

Sometimes all it takes is a sauce or in this case, salsa, to really change the dish around and give it pep.

This Pineapple Salsa is just the thing, and the best part is that it only takes minutes to whip up!

It's nightshade-free, making it perfect if you're on the AIP Diet, and it has no added sugars, making it perfect for Paleo and Whole30 as well.

Ingredients for Pineapple Salsa

The ingredient list for this salsa is short as well. All you need are:

  • a can of pineapple chunks (you can also use fresh pineapple, but it will take longer to peel and chop)
  • cilantro
  • red onion
  • garlic
  • lime juice
  • sea salt

That's it! Probably things you already have in your fridge and pantry or can easily obtain.

Method for making the salsa

To make the salsa you can either use a food processor, which is the quickest way, or you can hand dice everything.

I personally recommend the food processor (using the “S” blade) as then all you need to do is put the pineapple chunks, a handful of cilantro, a chunk of peeled red onion, a peeled clove of garlic, the lime juice and sea salt into the processor, give it a whirl for a few seconds, and voila, salsa!

Chunkier style: If you're a chunky salsa fan, either hand dice everything and then mix in a bowl or add the garlic to the food processor first, pulse, then add everything else and pulse the food processor a few times until desired texture.

What to put the salsa on

You can use this salsa in so many different ways. Here are a few to put it on:

  • shredded pork (I love this recipe)
  • baked cod
  • roasted chicken
  • grilled salmon
  • shredded beef
  • burgers
  • ham
  • a baked potato (use a sweet potato if on AIP)
  • roasted diced sweet potatoes
  • roasted broccoli
  • as a salsa with plantain chips
  • on top of tostones

Ingredients
  

  • 1 cup Pineapple Chunks (drained if canned or fresh)
  • 1/2 cup Cilantro
  • 1/4 Red Onion
  • 1 clove Garlic
  • 1 tsp Lime Juice
  • 1/4 tsp Sea Salt

Instructions
 

  • Either chop all of the ingredients really finely and combine in a bowl, or pulse in a food processor until all the pieces are the same small size.

    I use the core from a fresh pineapple (pulsed fine in food chopper) for this recipe (if not sweet enough I add a smidge of stevia). No waste pineapple!
