You never know where you'll find inspo
One of my favorite appetizers I've ever had at a restaurant was cashew butter-stuffed dates.
I had them shortly after I'd started eating grain-free and it was an eye-opening experience that I could in fact go to a restaurant AND still have food that was amazing.
Even now the memory brings back a feeling of nostalgia around the new confidence that I could in fact do my new way of living.
This memory is an important reminder that even if you're restricted in what you can eat, keeping an open mind is important because you never know where you'll find your new favorite dish!
Tigernut Butter As a Cashew Butter Substitute
Anyway, if you're on the AIP diet or nut-free, you obviously can't do cashew butter, but tigernut butter TOTALLY works as a delicious replacement.
And after I discovered that you can make tigernut butter in less than a minute, I immediately thought of stuffing dates with it to see if it would work and it sure does! (And read that post if you aren't sure why I'm saying tigernuts are nut-free)
You can easily have an appetizer or dessert in just a few minutes.
Spicing up the tigernut with cinnamon and vanilla powder (if you choose to) really makes this even better AND then topping it with just a hint of sea salt? OMG.
Of course you can use pre-made tigernut butter too, it's just the 30-second version makes this really easy if you don't have that on hand.
Ingredients in these stuffed dates:
There are very few ingredients in these dates. To get the exact measurements look at the recipe card below.
• Dates – You want dried dates like medjool dates for this recipe. You'll need to remove the pits and split them open, so bonus if you can find them pre-pitted. However the pits are quite easy to just tear out with your fingers.
• Tigernut Butter – this nut-free AIP-friendly nut-butter alternative can be found premade or you can make a super quick and easy version using my 30-second tigernut butter recipe that uses tigernut flour
• Maple Syrup or Honey – this is just to sweeten the filling just slightly
• Cinnamon – I use this spice to bring a bit of warm flavor to the filling
• Vanilla Powder, Carob Powder, and Sea Salt – these are all optional ingredients that take these dates to the next level. However, they are not required to have amazingly delicious stuffed dates. But I recommend you play around with them if possible!
How to make the stuffed dates:
Making this recipe is a SUPER simple process.
• Remove the pits from the dates (if you didn't buy pre-pitted dates)
• Mix the filling ingredients together
• Spoon the filling into each of the dates
• Add any additional garnishes like carob powder or sea salt

Tigernut Butter Stuffed Dates (AIP, Paleo)
- Split the dates open and remove the pits. Mix together the tigernut butter, cinnamon, vanilla, and maple syrup in a small bowl. Scoop a small amount of the tigernut butter into each date. Sprinkle carob powder and a dash of sea salt on top if desired. Serve.
