If you're searching for a nourishing, quick snack or lunch that's Paleo, AIP, Whole30, or egg-free, these tuna salad bites are perfect!
When that snack attack hits, you may not want to spend a lot of time making something. However, if you're on a restrictive diet like the AIP Diet (Autoimmune Protocol), Whole30, or Paleo, snack options are more limited than just grabbing an energy bar.
Plus, eating to get nutrients rather than just satisfy a craving is a much smarter idea. This snack of tuna, zucchini or cucumber, and an olive will fulfill that nutrient-dense mini-meal!
Make it Lunch
Of course, you don't need to just limit this to a snack – it's also a quick lunch option as well. Serve it up with some fruit or if not on Whole30, some sweet potato or cassava chips and be full until dinner!
Zucchini or Cucumber?
The green rounds used as the “cracker” in this meal can either be zucchini or cucumbers. It's totally up to you, and you don't need to cook either one.
I used zucchini in mine just because it's August as I write this and I've got more zucchini than I know what to do with. But come December, cucumbers are usually cheaper in my store, so I'd use those instead.
But really, just use what you prefer!

Tuna Salad Bites Recipe

Tuna Salad Bites (Paleo, Whole30, AIP)
Ingredients
- 1 can chunk Tuna (packed in water and drained)
- 1 tbsp Apple Cider Vinegar
- 1 tbsp Olive Oil
- 1/2 tsp dried Parsley
- 1/2 tsp Sea Salt
- Olives (Kalamata, Black, or Green)
- 1 small Zucchini or Cucumber
Instructions
- Cut the zucchini or cucumber into thin rounds.
- In a bowl, mix the tuna, apple cider vinegar, olive oil, parsley, and sea salt with a fork until combined, breaking the tuna up as you mix
- Top the zucchini/cucumber with some of the tuna mixture and then an olive or two. Serve!
